Ridge Gourd (Peechinga) Sambar Recipe

Ingredients for preparing Ridge Gourd (Peechinga) Sambar

  • Peechinga(Ridge Gourd ) – 1
  • shallots – handful
  • Tomato -  2
  • Green chillies – 2
  • Toor dal – 1 cup
  • Turmeric –  a pinch
  • Tamarind juice s – ½ tsp
  • Grated coconut – ½ tsp
  • Chilli Powder – 1tsp
  • Coriander powder – 2tsp
  • Asafoetida – a pinch
  • Fenugreek seeds powder   – ¼ tsp
  • Mustard Seeds – 1/4 tsp
  • Cumin seed – ½ tsp
  • Dry Red chillies -2
  • Curry leaves few
  • Salt to taste
  • Oil : As needed

Steps for preparing Ridge Gourd (Peechinga) Sambar

  1.  Pressure cook toor dal with turmeric powder and curry leaves.
  2. Heat oil in pan, throw shallots, tomato, green chillies and curry leaves and fry for a while.
  3. Then add cooked dal with the fried vegetables, mix 1 cup of water and salt.   Bring to boil.
  4. Roast grated coconut with curry leaves till it becomes brown, add coriander powder and red chilli powder. Grind this to fine paste by adding enough water.
  5. When the vegetables are cooked add tamarind juice, coconut paste, asafoetida and fenugreek powder. Let it boil in low flame till the gravy thickens.
  6. Heat oil in a pan, splutter mustard seeds, add dry red chillies, cumin seeds and curry leaves. Pour it to the sambar.
  7. Finally add chopped coriander leaves.
  8. Mix well before serving.
