Ingredients for preparing Spinach Sambar
- Chopped spinach: 2 cups
- Small onion ( shallots) : handful
- Tomato : 1
- Toor dal: 1cup
- turmeric powder: 1/2 tsp
- tamarind : small gooseberry size
- Red chilli powder : 1tsp
- Coriander powder: 2 tsp
- Fenugreek seeds powder : 1/2 tsp
- Asafoetida powder : A pinch
- garlic – 2 cloves
- Thick coconut milk : ½ cup
- Coconut oil : As needed
- Mustard seed : 1/2 tsp
- Cumin seed : 1/2 tsp
- Dry red chilli : 2
- Curry leaves
- Salt as needed
Steps for preparing Spinach Sambar
- Wash toor dal and pressure cook it with turmeric powder and curry leaves.
- Heat oil in a pan, add chopped onion and tomato. Fry for a while, then add garlic and chopped spinach, close the pan and cook it with medium flame.
- Then add red chilli powder, coriander powder to it and stir for a while. Mix it with cooked toor dal, bring to boil. Then add tamarind juice, asafoedia powder and fenugreek powder. Add salt as needed.
- Finally add thinck coconut milk, boil in low flame.
- Heat oil in apan add mustard seed and allow it to splutter,then add dry red chilli, cumin seeds and curry leaves. Fry for a minute. Pour it to the sambar.
