Ingredients for preparing Varutharacha Sambar

  • Toor Dal – 1/2 cup
  • Drumsticks – 1 nos.
  • Lady’s Finger – 2 nos.
  • Potato – halfed ( 1 no.)
  • Carrot – 1 no.
  • Tomato – 1 no.
  • Channa Dal(Pottu Kadala) – 1/2 tbsp
  • Chilli Powder – 1/2 tbsp
  • Turmeric Powder – 1/4 tsp
  • Coriander Powder – 1 tbsp
  • Fenugreek Seeds(Uluva) – 1/4 tsp
  • Mustard Seeds – 1/2 tsp
  • Asafoetida – a pinch
  • Small Onion – 2 nos.
  • Garlic – 2 nos.
  • Tamarind (goose berry size) size) – 1 no.
  • Red Chillies – 1 no.
  • Grated Coconut – 1/2 cup
  • Coconut Oil – 2 tsp
  • Curry Leaves – 2 stalk

Steps for preparing Varutharacha Sambar

  1.  Cook the toor dal in pressure cooker by adding required water and turmeric powder.
  2. Heat oil in a pan, add asafoetida powder, chana dal and fenugreek seeds.
  3. Add grated coconut, small onion, garlic and curry leaves.
  4. Stir and fry till golden brown.
  5. Add coriander powder and chilli powder.
  6. Roast the ingredients to become a red colour. When it is cold, grind these to a paste.
  7. Mix all the chopped vegetables and salt into the cooked dal.
  8. Pour tamarind pulp and enough water.
  9. Cover and cook it till the vegetables done.
  10. Finally add the grinded masala paste, allow it to boil.
  11. Heat oil in another pan, splutter mustard seeds and fry red chillies and curry leaves.
  12. Pour it over the curry and serve it.
