Ingredients for preparing Varutharacha Sambar
- Toor Dal – 1/2 cup
- Drumsticks – 1 nos.
- Lady’s Finger – 2 nos.
- Potato – halfed ( 1 no.)
- Carrot – 1 no.
- Tomato – 1 no.
- Channa Dal(Pottu Kadala) – 1/2 tbsp
- Chilli Powder – 1/2 tbsp
- Turmeric Powder – 1/4 tsp
- Coriander Powder – 1 tbsp
- Fenugreek Seeds(Uluva) – 1/4 tsp
- Mustard Seeds – 1/2 tsp
- Asafoetida – a pinch
- Small Onion – 2 nos.
- Garlic – 2 nos.
- Tamarind (goose berry size) size) – 1 no.
- Red Chillies – 1 no.
- Grated Coconut – 1/2 cup
- Coconut Oil – 2 tsp
- Curry Leaves – 2 stalk
Steps for preparing Varutharacha Sambar
- Cook the toor dal in pressure cooker by adding required water and turmeric powder.
- Heat oil in a pan, add asafoetida powder, chana dal and fenugreek seeds.
- Add grated coconut, small onion, garlic and curry leaves.
- Stir and fry till golden brown.
- Add coriander powder and chilli powder.
- Roast the ingredients to become a red colour. When it is cold, grind these to a paste.
- Mix all the chopped vegetables and salt into the cooked dal.
- Pour tamarind pulp and enough water.
- Cover and cook it till the vegetables done.
- Finally add the grinded masala paste, allow it to boil.
- Heat oil in another pan, splutter mustard seeds and fry red chillies and curry leaves.
- Pour it over the curry and serve it.
