Ingredients for preparing Brinjal Sambar
- Toor dal : 1 cup
- Brinjal : 1/4 kg
- Shallots : 1 cup
- Potato : 1
- Tomato : 2
- Green chillies : 2 -3
- Tamarind : lemon size
- Turmeric Powder : 1/2 tsp
- Garlic: 1 no.
- Grated Coconut : 1/2 cup
- Red chilli powder : 1tsp
- Coriander powder: 2 tsp
- Fenugreek seeds powder : 1 tsp
- Asafoetida powder : A pinch
- Coconut oil : As needed
- Mustard : 1 tsp
- Black gram : 1 teaspoon
- Cumin seed : ½ tsp
- Dry red chilli : 2
- Curry /coriander leaves : few
- Salt as needed
Steps for preparing Brinjal Sambar
- Cook toor dal with 2 cups of water using pressure cooker, add pinch of turmeric powder and curry leaves.
- Extract tamarind juice after soaking it in warm water about 15 minutes.
- Heat oil in a pan, stir-fry shallots followed by potato, tomatoes, green chillies, garlic and brinjal, stir thoroughly and close the pan. Cook for 10 minutes after adding salt.
- Mix the vegetable with cooked dal and bring to boil for 5 minutes, add tamarind juice, salt as needed, Asafoetida powder and Fenugreek seeds powder. Keep the flame into medium.
- Meanwhile roast grated coconut with curry leaves till it become brown. Keep the flame in medium, add red chilli powder, coriander powder a grind this to fine paste.
- Finally add the coconut mixture, boil it in low flame till the gravy thickens.
- Heat oil in a pan, splutter mustard seeds, then add cumin seeds, black gram, dry red chillies and curry leaves. Pour it to the sambar.
- Add fresh coriander leaves.
