Ingredients for preparing Drumstick Sambar
- Drumstick – 2 to 4
- Tomato – 1
- Shallots – Handful
- Green Chillies – 2
- Curry leaves and coriander leaves – few
- Toor Dal (Sambar Parippu) – 1 cup
- Tamarind: gooseberry sized ball
- Asafetida powder (hing) – ½ teaspoon
- Oil – as needed
- Mustard - ¼ tsp
- Cumin Seeds – ¼ tsp
- fenugreek seeds powder – ¼ tsp
- Dry Red chillies – 2
- Turmeric powder – ¼ tsp
- Red chilli powder – 1 tsp
- Coriander powder – 2 tsp
- Salt – according to taste
Steps for preparing Drumstick Sambar
- Wash Toor dal thoroughly and soak in water for 15 minutes. Pressure cook dal with a pinch of turmeric powder and curry leaves on medium flame. The dal should become soft and completely cooked.
- Take some warm water in a bowl and soak tamarind for 20 to 30 minutes. Once the tamarind gets soft and pulpy, squeeze the juice from it. Later discard the pulp.
- Heat oil in a pan, add shallots, green chillies, tomato and curry leaves. Fry them for 4-5 minutes. Then add red chilli powder and coriander powder, stir for a while.
- Then pour 1 cup water, when the water starts to boil, add drumsticks. Cover the pan with the lid and cook on low flame.
- When the vegetables are done, add cooked dal, salt, tamarind juice, asafoetida powder and fenugreek seeds powder. Stir well and boil till vegetables get soft.
- Heat oil in a pan, splutter mustard seeds, throw cumin seeds, dry red chillies and curry leaves. Pour it to the sambar and mix well for few minutes.
- Add chopped Coriander leaves. Keep the pan covered till served.
- Give a quick stir before serving.
